Deviled eggs are like the must-have food item for Easter Sunday, at least for us! Each year I make it a little bit different from the last. A couple of years ago I made one inspired by a Chrissy Teigen and I loved them so much. However, these are the most refined and my favorite now! They are as delicious as they are good-looking! Ingredients: A dozen hard-boiled eggs, peeled and halved 6 Tbsp crème fraîche 3 Tbsp mayonnaise 2 tsp dijon mustard 1 tsp truffle oil (I used white truffle oil) 1/2 tsp sugar 1/2 tsp white wine vinegar 1/2 tsp kosher salt or pink Himalayan salt if you want pink! 1 tsp herbs de provence * Natural food coloring or beet juice Herbs de provence is a mixture of dried herbs considered typical of the Provence region of southeast France. It consist of thyme, basil, savory, fennel, and lavender flowers. You can make your own or get it on Amazon or the grocery store. I got mine at Trader Joe's 1. Hard boil the eggs. I know there are a ton of different methods so whatever works best for you is fine. 2. After the eggs are done, bring them to the sink and fill the pan with ice water. The ice bath will stop the cooking process. 3. Once cooled, peel the eggs, cut them in half and carefully take the yolk out and place the yolks in a separate bowl. Finish up by rinsing all the eggs and make sure there is no yolk. 4. You can either dye them with natural food coloring or use beet juice. I used natural food coloring this time because that's what I had at home. Add two or three drops of the food coloring in a bowl with water then place the eggs in the bowl and let the color start to set in. This process can take a few minutes to hours depending on the color you what to obtain. Once it’s the perfect pink, take them out and place on a paper towel to dry. 5. Combine yolks with the crème fraîche, mayo, mustard, truffle oil, sugar and vinegar. Make sure it is mixed thoroughly so it doesn't get stuck during piping. 6. Pipe or scoop mixture into the pink egg. Top with herbs de provence and pink Himalayan salt, Kosher salt or another finishing salt. 7. Garnish with Chamomile flowers and enjoy!

Preheat oven to 475 degrees. You can grease a baking sheet or use parchment paper and flour. I used the second option because the parchment paper allowed me to transfer the flatbread into a wood board once it was done. Cut the chicken into small squares. Season them with salt and pepper and cook them in a frying pan for about 5-10 minutes. Make sure to not overcook as they will go in the oven later. Side note: I prefer dark meat over chicken breasts for this recipe but next time I need to remind myself to buy skinless and boneless chicken tights in order to save lots of prep time. While your chicken is cooking, get your dough ready. I like thin crust but I purchased a regular one and used the rolling pin to roll it thin and cover a 18"x26" baking pan. Cut pineapple into small pieces and chop your onions. You can add other ingredients if you want. That is the beauty of flat breads, you can as much or as little as you want. I was going to add bacon but I didn't have that much and the husband wanted to save it for breakfast the next morning. :) Next, mix all the ingredients to make the barbecue sauce and spread it on the dough. Top with chicken, pineapple, onion, bacon and mozzarella cheese. Finally bake in oven for 10-12 minutes or until crispy. Then cut, serve and enjoy!
Yesterday was Super Bowl Sunday and all I gotta say is what a game! The Eagles beat the Patriots and I don't think anybody saw that coming, it was a very exciting evening. Also Justin Timberlake was the half time show. I thought it was fun and family appropriate. However, listening to some of his early singles reminded me that he has been in the music industry for a long time and that I am also getting old. This unofficial American holiday is typically filled with lots of yummy but very greasy food. I didnt want to put on 5lb on this weekend so I made two kinds of low fat chicken wings so we could have something we could all enjoy minus the calories. I bought 4 lbs of chicken wings and split them into two. 16 chicken wings made 32 pieces (drums and wings). Prep time was 10 minutes and it could be less if your chicken wings are already cut! Cook time was 40 minutes for a total of 1 hour!

To save even more calories, before you coat the wings with the sauce or dry rub, place the wings in a pot and cover them with water. Bring to a boil, cook for 10 minutes, and then drain in a colander.Once they cool down, using your hands, peel the skin off of the wings. Follow step 1-3 and for step 4, broil the chicken wings for 20 minutes instead of 40 If you want your wings extra crispy, place back under the broiler for an additional minute. Can't believe Halloween was one month ago already. This year was so much fun! Elia is now 15 months and boy is she into anything and everything these days. Our families always get together for appetizers and drinks at my in-laws house. They get a lot of kids in their neighborhood so it was a great place for Elia first time trick or treating (insert crying emoji here)! One of my go-to party appetizers are deviled eggs because they are yummy, fast to prepare and always a hit!. Also, as you can probably see by now, there are so many creative and fun ways to decorate them for Halloween! 1. In a pot, combine 8 cups of water with food color choice. Put one dozen eggs in a single layer, cover and bring to boil. Remove from heat and let stand for 15 minutes. 2. Gently crack the egg shell in several places. The more places you crack, the more webbing the egg will have. 3. Place eggs back into the colored water and let it sit for 2-3 hours. 4. Peel eggs and cut lengthwise. Scoop our the egg yolk and mix it with the ingredients following ingredients: 2 teaspoons of food color of your choice 6 tablespoons chipotle mayonnaise 2 tablespoons of mustard Salt and pepper to taste 5. Fill each egg white with yolk mixture. |
